This less sour Ethiopian coffee has a smooth body, it has a floral, citrus taste with undertones that are similar to wine or berries.
At elevations of 1,700 - 2,200 meters The coffee beans from this region are often considered to be high-grown and are classified as Strictly High Grade (SHG). The higher elevation helps the coffee plant develop slow, allowing it to deliver more nuanced flavors to the brew.
Ethiopian coffee is usually processed in a wet manner. The coffee beans are immersed in large vats that are filled with water until the mucilage, which is fruity and wine-like, is removed. This process isn't as common in Latin America but it is what makes the famous washed Yirgacheffe cups.
